About Chef Aislinn McManigal-Quintana:
Since her time at Seattle Culinary Academy, Chef Aislinn has worked in top restaurants such as Spain’s La Botica, a Michelin star restaurant; Seattle’s Matt’s in the Market and Tom Douglas Restaurants. In 2020, she and her husband, Sebastián, opened a pop-up bakery, Oso Negro, specializing in artisanal alfajores. Despite the challenges posed by the pandemic, Oso Negro - selling exclusively at farmers markets and online - quickly gained a substantial following and made many of the Seattle area foodie lists. Chef Aislinn and Sebastián now call Red Mountain home and Chef Aislinn has quickly been making a name for herself for crafting exquisite seasonal dishes perfectly paired with wines from the Red Mountain AVA.
